Spinach & Mushroom Omlette

I got this idea from IHOP. It is one of our favorite restaurants and this omlette is too good. As usual, I added an Indian twist to the American dish. Spinach and mushroom make a lovely combination.
A bunch of Spinach
3-4 medium to big Mushrooms
1 medium Onion
4 eggs (2 Omlettes)
2 tsp Red Chilli powder
1 1/2 tsp Garam Masala powder
1-2 slices of cheese (Optional)
In a pan, add about 1 tsp of oil/butter. When it becomes hot, add in the chopped onions. Once the onions turn translucent, add in the chopped mushrooms. Add salt for taste. Stir in between, the salt helps the mushrooms and onions to sweat to little. Once the mushrooms cook and become reduced in size, add the red chilli powder and garam masala powder. Mix it well and then add the spinach. The stuffing is ready when the spinach wilts down. Check and adjust the seasoning.
Make an omlette as per your taste. I make 2 egg omlette. I beat the eggs and a little bit of salt. Then pour it on the hot pan covered with little oil. Once the omlette starts setting up, I sprinkle pepper around the omlette. Once the omlette is set on one side, flip it over. Let it set and then, over one half of the omlette, add the spinach-mushroom mix and cheese slice (optional). Then fold the other half of the omlette over. 🙂 Simple.
